Na batedeira, bata as gemas, a margarina, o açúcar e a essência até formar um creme esbranquiçado. Adicione o leite, a farinha e a canela intercalados, sem parar de bater, até formar uma massa homogênea. Junte as claras batidas em neve, o fermento e misture com uma colher. Transfira para uma fôrma de 20cm de diâmetro alta untada e enfarinhada. Leve ao forno médio (180º C), preaquecido, por 35 minutos ou até dourar. Deixe esfriar, desenforme e corte a massa em três partes, na horizontal. Para o recheio, misture o doce de leite e o creme de leite. Coloque em um saco de confeitar com bico pitanga. Disponha a base da massa em um prato e cubra com 1/3 do recheio utilizando o saco de confeitar. Coloque outra massa por cima e cubra com mais 1/3 do recheio. Finalize com a massa restante e decore o topo com o recheio restante. Polvilhe com açúcar e canela peneirados e sirva em seguida.</div>
